Tasting Belize: All of it

It’s not easy visiting every hotel, restaurant, dive shop, and golf cart rental on Ambergris Caye. Today, it’s lobster ceviche and a chef salad at Wild Mango’s (by locally famous chef, Amy Knox) — it’s all quite delicious after the most amazing set of dives in my life.

Actually, it was yesterday that I went 150 feet down into the Blue Hole, accompanied by more than a dozen full-size reef sharks and massive groupers, but the days kind of blend together, even without alcohol.

After lunch, I take off down Coconut Drive, pulling into yet another resort, asking for a “property description and rate sheet, please,” then getting the standard tour of rooms, suites, villas, and cabanas. It would be tedious if each place weren’t so damn unique and creative. But that’s Belize for you, where big blocky hotels are nearly non-existent, and personal charm pervades.

I knock off most of the south side of the island the first day, and today I try to attack San Pedro Town, a daunting task in the mid-day heat. Time for another lime juice…

Hi Joshua,
whoa, man u really are something.I was just reading the Indian and Pakistani parts and got interested in the latest about you.So now u are in Belize.Great, man, keep it up and may the Lord be with u throughout your sojourn.By the way,im a villager living on the Indian side of Punjab, very close to the border not far from Lahore.Through your writings i’ve been able to hop across to the other side and almost experience what it is like to be there. Its been a dream of mine to go to Pakistan which is just a few miles from where i live but these man made borders have separated us from our brethren across the border. We were one not too long ago.Hope to keep clued in to your progress.God Bless and SHALOM.
Just for the salad alone, Belize is a nice place to travel. Man, you’re really tasting Belize at its finest. The Blue Hole must’ve been a paradise below.
Keep traveling and check out other destinations. How about the lighthouse reef atoll? Anyways, enjoy your trip.
Belize nonetheless! Aside from the signature attractions, local delicacies are worth trying as well.

Hi…Thanks for the salad pic at Wild Mango’s on Ambergris Caye, Belize. I live in Sarasota, FL, and will be at Wild Mango’s next Wednesday to enjoy that same salad. Why? Because we are going there for the Thanksgiving weekend and the main reason for the visit is that fabulous chef, Amy Knox, is my daughter! So glad you enjoyed Wild Mango’s!
